The Challenge

The restaurant was converting a former retail space with minimal existing plumbing. The city required a commercial grease interceptor sized for the kitchen load, which had to be buried in the concrete slab — requiring precise coordination between the plumbing and concrete crews to set the trap before the slab pour.

Our Solution

We coordinated the grease interceptor installation with our concrete crew, confirming exact trap location and depth before any concrete was poured. All underground drain lines were pressure-tested and city-inspected before slab closure. The kitchen rough-in was designed against the owner's specific equipment layout, with stub-outs for every fixture verified against the equipment specs before walls were closed.

The Results
